At what point do you know when to stop layering? I tend to over work, so I need some advice on when to stop…How much contrast should I work for, or does it just depend?
I rather muddled the top of the hat when trying to erase grid lines.

This series of photos is wonderful and at a glance I think the details and contrast (range of values) is good. In other words, well done!!!
I think your only issue is the grid lines. After your initial contour drawing is done, with lines in areas where there is a change in values, you probably don’t need those grid lines anymore. I’d gently erase the grid before applying any watercolor. Otherwise you won’t be able to get rid of it.
I’m so glad you shared your progression of photos. Watercolors are a good media for you.
